Mabu Mabu damper making class – ONLINE – Thursday 15 April

In this online experience, Meriam chef, Nornie Bero will share her love of Australian native ingredients in a damper-making demonstration, and will show participants how they can incorporate indigenous ingredients and flavors into their own home-cooking. In each session Nornie will make a variety of dampers in Torres Strait Islander style – wrapped in banana leaves and baked with pumpkin, wattleseed and saltbush varieties. She’ll share tips on how to get the perfect damper softness, and where to source ingredients.

To cook along with Nornie, please read the recipe for additional required ingredients, pre-roast the pumpkin and preheat your oven to 200 degrees celsius, fan-forced.

Registration is a must as we’ll be sending out a Zoom meeting ID prior to the workshop date. To register, call us on 9244 3333 and ask for Torie or email kwp@djirra.org.au
